How to make mixed rice

This post has general guidelines on how to cook plain rice and then mix it with the vegetable mixture

Generally, for mixed rice, either sona masoori rice or basmati rice can be used.  It depends on what kind of vegetable mixture you are mixing.  For ex: if I prepare pulav, I use basmati but if I prepare capsicum-carrot rice(also called capsicum-carrot bath) I use sona masoori.  It is up to you to use either of the variety for different types of dish.

Measurements for sona masoori rice:
  • 1 cup rice
  • 2 cups water
Measurements for basmati rice:
  • 1 cup rice
  • 1.5 cups of water
Method:

Wash the rice 3-4 times with water.  Now add water and cook it either in a pressure cooker or rice cooker.

If you are using a pressure cooker:
make sure to cook rice in a vessel instead of directly cooking in the pressure cooker itself.  Add 3-4 cups of water inside the pressure cooker and keep the vessel in it.  Also, cover the vessel with a suitable lid so that excess water will not get into the rice and make it too liquid.  Cook it on medium high flame.  Once the pressure starts releasing, place the weight on it and let it release pressure thrice.  Switch it off and let it cool completely.  Do not interfere in the cooling process.  This will not let the rice cook perfect.
Once it is cooled, take out the rice and spread it in a flat utensil like a plate or tray and let it cool until it is luke warm(almost cold).  Now mix it with the vegetable mixture. 

If you are using rice cooker:
Just cook the rice.  Once it is done, spread it on a plate or tray and let it cool.  After it is cooled, mix it with the vegetable mixture.

If you mix hot rice with the vegetable mixture, your mixed vegetable rice will be one mushy dish.  The mixed vegetable rice(bath) will taste best when the rice grains are separate and not mushy.  By cooling down the rice, the grains will be separate.
