Ridge Gourd Fry(Heerekai Palya)

This will be a good accompainment with Rasam Rice(Anna Saaru).

Preparation Time: 5-7 mins
Cook Time: 15-20 mins

Measurements & Ingredients:

  • 3 medium sized ridge gourd(heerekai)
  • salt to taste
  • 1/4 glass milk
  • few curry leaves
  • 2 green chillies
  • 3-4 tspns oil
  • 1/4 mustard seeds(sasive)
  • 1/4 split black gram(uddina bele)
  • 1/2 bengal gram(kadale bele)
  • pinch of asafoetida(hing)


Peel the vegetable and cut it into small pieces.

In a pan heat oil.  To this add mustard seeds, black gram, bengal gram, curry leaves, green chillies and asafoetida(all in the same order).   

Once they turn light brown, add the chopped vegetables.

Add salt and let it cook.  Do not add water, as the vegetable and salt will give out enough water for the cooking.  Cook on low medium flame for 5-7 mins with occasional stirring. 

Now add the milk, mix well and let it cook for another 5 mins or until the milk is absorbed.
Take it out in a serving bowl and serve with rice!

Watch for the quantity..
When you chop this vegetable, it looks you have sufficient quantity, but when you cook it, the quantity shrinks.
